Pasta With Homemade Kale Pesto

I've tried to grow my own basil so I can make reams of homemade pesto, but I've failed far too many times. That led me to a bit of experimentation to whip up my own pesto, with something that is more readily available in my fridge – good old kale. This super-simple kale pesto pasta tastes delicious, you know exactly what went into it, and it's whipped up quicker than you can go to the shop and buy it.

Ingredients

Serves 3

  • 300g Pasta
  • Olive oil to taste
  • Two good handfuls of kale (about 100g)
  • 1 clove of garlic (chopped)
  • 50g nuts (mix of cashews and walnuts)
  • 50g cheese
  • 1 tbsp lemon Juice

Method

Place the pasta in a saucepan of boiling water with a pinch of salt and leave it to cook for around 10 minutes while you make the pesto.

Start by lightly toasting the nuts for a few minutes in a dry pan.

Then put your kale, garlic, toasted nuts, lemon juice and cheese into a blender. Pulse a few times and blend.

While it's blending, gradually pour in enough oil to moisten the mixture. Drain the pasta, return it to the saucepan and stir in the homemade pesto.
