    Pasta With Homemade Kale Pesto

    I've tried to grow my own basil so I can make reams of homemade pesto, but I've failed far too many times. That led me to a bit of experimentation to whip up my own pesto, with something that is more readily available in my fridge – good old kale. This super-simple kale pesto pasta tastes delicious, you know exactly what went into it, and it's whipped up quicker than you can go to the shop and buy it.

    Ingredients

    Serves 3

    • 300g Pasta
    • Olive oil to taste
    • Two good handfuls of kale (about 100g)
    • 1 clove of garlic (chopped)
    • 50g nuts (mix of cashews and walnuts)
    • 50g cheese
    • 1 tbsp lemon Juice

    Method

    1. Place the pasta in a saucepan of boiling water with a pinch of salt and leave it to cook for around 10 minutes while you make the pesto.
    2. Start by lightly toasting the nuts for a few minutes in a dry pan.
    3. Then put your kale, garlic, toasted nuts, lemon juice and cheese into a blender. Pulse a few times and blend.
    4. While it's blending, gradually pour in enough oil to moisten the mixture. Drain the pasta, return it to the saucepan and stir in the homemade pesto.
